Ingredients
- 3-4 chicken breasts
- 1 teaspoon minced garlic
- ¾ cup white wine
- 2 ham steaks, diced
- 2-3 courgettes, trimmed and chopped
- 1 cup grated gruyere cheese
- 1 cup fresh breadcrumbs
- 2 tablespoons butter, diced
Method
- Preheat the oven to 180ºC.
- Cut the chicken into chunky pieces and brwon in a dash of butter in a frying pan. Transfer pieces to a deep, 6-cup capacity ovenproof dish.
- Add the garlic and wine to the pan, bring to the boil and pour over the chicken. Scatter over the ham and courgettes. Sprinkle the cheese, breadcrumbs and butter on top.
- Bake in the preheated oven for 40-45 minutes or until hot and golden. Serve garnished with your favourite herbs and accompany with baked pumpkin.
Cooks Tips
- To save time, buy the chicken already diced from the butchery section. Ask for 450-500 grams of diced meat. - Gruyere cheese has a lovely nutty flavour and is ideal for melting. It is the traditional cheese to use with schnitzels when they're served "a la Cordon Bleu". Other good melted alternatives include Edam, Gouda or colby.
