Ingredients
- 1½ tablespoons instant coffee granules
- 1 tablespoon roasted whole coffee beans, optional
- ¾ cup water
- ¼ cup dark rum or coffee liqueur
- 1 cup sugar
- 1 teaspoon vanilla essence
- 2-3 teaspoons arrowroot
Method
- Into a small saucepan, put the coffee granules, coffee beans if using, water, rum or liqueur, sugar and vanilla essence.
- Simmer over a low heat for 3-5 minutes or until the sugar has dissolved.
- If wishing to thicken the syrup further, mix the arrowroot with a dash of water to make a thin paste and stir into the hot coffee syrup and simmer for 1 minute until thickened a little. Remove from the heat, cool and serve.
