Coffee Syrup

  • Makes 1¾ cups
Coffee Syrup


  • 1½ tablespoons instant coffee granules
  • 1 tablespoon roasted whole coffee beans, optional
  • ¾ cup water
  • ¼ cup dark rum or coffee liqueur
  • 1 cup sugar
  • 1 teaspoon vanilla essence
  • 2-3 teaspoons arrowroot


  1. Into a small saucepan, put the coffee granules, coffee beans if using, water, rum or liqueur, sugar and vanilla essence.
  2. Simmer over a low heat for 3-5 minutes or until the sugar has dissolved.
  3. If wishing to thicken the syrup further, mix the arrowroot with a dash of water to make a thin paste and stir into the hot coffee syrup and simmer for 1 minute until thickened a little. Remove from the heat, cool and serve.
