Coconut And Lime Cream

A refreshing and easy coconut pudding.


  • 1 tsp vanilla essence
  • 400 ml can lite coconut milk
  • ¼ cup caster sugar
  • 2 tsp gelatin
  • 2 tblsp water
  • ½ cup cream, whipped, chilled
  • grated rind 1 lime


  1. Put vanilla essence in a saucepan with coconut milk and caster sugar. Warm so sugar dissolves but do not boil. Remove from heat.
  2. Sprinkle the gelatin over the water and leave to swell. Warm in the microwave for 30 seconds and stir or until the gelatin is smooth.
  3. Pour the gelatin into the coconut milk and stir well to mix. Cover and refrigerate until the milk has almost set.
  4. Fold the chilled whipped cream and lime rind into the coconut milk mixture. Transfer to a bowl and refrigerate until set. Serve with fresh tropical fruits. This cream can also be set in glasses for individual serves.
