Coconut And Cheese Gems

Try these tasty gems with the Chunky Lime and Tomato Soup.


  • 100 grams butter, softened
  • ½ cup sugar
  • 2 eggs
  • grated rind one lime
  • 2 tblsp golden syrup
  • 1½ cups flour
  • 2 tsp baking soda
  • ½ cup desiccated coconut
  • 1 cup coconut milk
  • 1 cup finely grated cheese


  1. Beat the butter and sugar until light and creamy.
  2. Add the eggs, lime rind and golden syrup and beat well.
  3. Sift the flour and baking soda together and fold into the creamed mixture with the desiccated coconut and coconut milk.
  4. Spoon into 20 well-greased patty pan tins and sprinkle the cheese evenly on top.
  5. Bake at 200ºC for 15 minutes until well risen and golden. These gems are best served warm.
