Try these tasty gems with the Chunky Lime and Tomato Soup.
Ingredients
- 100 grams butter, softened
- ½ cup sugar
- 2 eggs
- grated rind one lime
- 2 tblsp golden syrup
- 1½ cups flour
- 2 tsp baking soda
- ½ cup desiccated coconut
- 1 cup coconut milk
- 1 cup finely grated cheese
Method
- Beat the butter and sugar until light and creamy.
- Add the eggs, lime rind and golden syrup and beat well.
- Sift the flour and baking soda together and fold into the creamed mixture with the desiccated coconut and coconut milk.
- Spoon into 20 well-greased patty pan tins and sprinkle the cheese evenly on top.
- Bake at 200ºC for 15 minutes until well risen and golden. These gems are best served warm.
