Classic Bread And Herb Stuffing

Using fresh herbs truly makes a world of difference to this classic recipe. Use brown breadcrumbs for a maltier flavour, sour dough for a gutsy texture or plain old white if your family love simple flavours.

Ingredients

  • 6 rashers bacon, diced
  • 2-3 tblsp oil
  • 1 large onion, peeled and chopped
  • 6 cloves garlic, peeled and chopped
  • 4 cups fresh breadcrumbs (sour dough is nice here)
  • 50 grams butter, melted
  • 1 egg
  • ½ cup chopped fresh parsley
  • ¼ cup finely chopped fresh sage
  • 2 tblsp chopped fresh thyme

Method

  1. Cook the bacon in the oil in a frying pan until crispy. Transfer the bacon to a large bowl.
  2. Add the onion and garlic to the pan and cook over a low heat for 8-10 minutes until the onion begins to soften. Do not cook over a high heat or the garlic will burn.
  3. Add the onion to the bacon with the breadcrumbs, butter, egg and herbs and mix together well. Season if wished with salt and pepper.

Enough for a 4.5-6kg turkey
