
Using fresh herbs truly makes a world of difference to this classic recipe. Use brown breadcrumbs for a maltier flavour, sour dough for a gutsy texture or plain old white if your family love simple flavours.
Ingredients
- 6 rashers bacon, diced
- 2-3 tblsp oil
- 1 large onion, peeled and chopped
- 6 cloves garlic, peeled and chopped
- 4 cups fresh breadcrumbs (sour dough is nice here)
- 50 grams butter, melted
- 1 egg
- ½ cup chopped fresh parsley
- ¼ cup finely chopped fresh sage
- 2 tblsp chopped fresh thyme
Method
- Cook the bacon in the oil in a frying pan until crispy. Transfer the bacon to a large bowl.
- Add the onion and garlic to the pan and cook over a low heat for 8-10 minutes until the onion begins to soften. Do not cook over a high heat or the garlic will burn.
- Add the onion to the bacon with the breadcrumbs, butter, egg and herbs and mix together well. Season if wished with salt and pepper.
