Citrus Yoghurt And Semolina Flan

Decorate this cake with summer fruits of your choice.

Ingredients

  • 250 grams butter
  • 1½ cups caster sugar
  • grated rind 4 lemons
  • 4 eggs
  • ¼ cup flour
  • 1½ cups fine semolina
  • 1½ cups ground almonds
  • ½ cup lemon juice
  • ½ cup plain unsweetened yoghurt
  • Summer fruits to garnish

Syrup

  • 1 cup lemon juice
  • 1 cup caster sugar
  • ¼ cup Limoncello or lemon Vodka

Method

  1. Beat the butter, sugar and lemon rind together until creamy. Beat in the eggs.
  2. Fold in the flour, semolina and ground almonds alternately with the lemon juice and yoghurt. Turn into 2 paper-lined 22-24cm flan tin tins.
  3. Bake at 180ºC for 30-35 minutes.
  4. Once cooked, remove from the oven and stand in a deep baking dish. Pierce with a fork and slowly pour the syrup evenly over the flans.
  5. Before serving decorate the flan with summer fruits of your choice. Serve with whipped cream

Syrup

  1. Make the syrup by stirring together the ingredients over a low heat until sugar dissolves. Cool.
  2. Remove cooked flans form the oven and stand in a deep baking dish. Pierce with a fork and slowly pour over the syrup.
