These large flat biscuts are thin and crisp and are ideal either by themselves or served with poached fruits as a dessert.
Ingredients
- 250 grams butter
- 1 cup sugar
- 2 eggs
- 2 cups self raising flour
- pinch salt
- 1 teaspoon ground cinnamon
- 70 gram packet pecans
Method
- Melt the butter over a moderate heat and stir in the sugar. Remove from the heat and let it cool for 5 minutes. Beat in the eggs.
- Sift together the flour, salt and cinnamon and stir into the mixture.
- Put heaped teaspoonfuls on greased baking trays and press a pecan into the centre of each. Leave room because these biscuits will spread.
- Bake at 200ÂșC for 10 minutes until the biscuits have turned a deep brown. Cool on a cake rack and store in an airtight container.
Cooks Tips
- You can use other spices like nutmeg, mixed spice, cardamom or ginger, and walnuts instead of pecans.
