Cinnamon And Pecan Cookies

These very special cookies would make a lovely Christmas gift.

Ingredients

  • 1 cup pecans
  • 125 grams butter
  • 1/2 cup caster sugar
  • 1 egg
  • 3/4 cup flour
  • 1/4 cup cornflour
  • about 24 pecan halves to decorate

Method

  1. Toast the pecans in a 180°C oven for 8-10 minutes until browned. Cool and then chop finely in a food processor.
  2. Beat the butter and sugar together until light and fluffy. Add the egg and beat well.
  3. Stir in the pecans, flour and cornflour, and mix well.
  4. Place large teaspoonfuls on to a well-greased baking tray and place a pecan half on top of each cookie.
  5. Bake at 180°C for 10-12 minutes until they begin to brown around the edges Cool on the tray for 3-5 minutes before transferring to a cake rack to cool. Store in an airtight container. Dust with icing sugar before serving or wrapping up as a gift.
