The sharpness of raspberries combined with the sweet chocolate and the citrus flavoured cream will make this easy log a favourite at any party.
Ingredients
- 2 cups cream
- 6 tblsp icing sugar
- 3 tblsp orange liqueur
- 1 cup fresh or frozen raspberries
- 286 gram pkt Chocolate Chunk Classic Cookies
- chocolate and raspberries to garnish
Method
- Whip the cream with sifted icing sugar and orange liqueur until it forms soft peaks. Reserve one-third whipped cream in the refrigerator. Lightly crush the berries with a fork and combine with the remaining two-thirds of whipped cream.
- Spread each biscuit generously with raspberry cream, sandwich with another biscuit. Continue in this way to make a log shape, place on a serving platter, cover with cling-film and refrigerate for 4 hours.
- When ready to serve cover liberally with reserved whipped cream, garnish with chocolate curls and extra raspberries. Slice diagonally.
Cooks Tips
·To make simple chocolate curls, use a potato peeler on the side of a chocolate bar.
