Chilli pork and choy sum stir-fry

Ingredients

Pork meatballs

  • 500 grams lean pork mince
  • 2 cloves garlic, finely chopped
  • 1 teaspoon grated ginger
  • 1 tablespoon sweet chilli sauce
  • 2 tablespoons chopped coriander

Sauce and noodles

  • 1 bunch choy sum
  • 4 cloves garlic, peeled and finely sliced
  • 1 large red chilli, deseeded and chopped
  • dash sesame oil
  • 400 gram packet Hokkien-style noodles
  • ¼-½ cup chilli sauce
  • 2 tablespoons fresh coriander

Method

  1. Mix the pork mince with the garlic, ginger, chilli sauce and coriander. Shape into walnut-sized balls. Pan-fry in a little oil until brown and cooked. Set aside.
  2. Pan-fry the choy sum with the garlic and fresh chilli in a dash of sesame oil until the choy sum begins to soften.
  3. Add the noodles, chilli sauce and coriander. Lastly, toss through the meatballs and serve.
