Chilli And Lime Marmalade

Chilli And Lime Marmalade

Ingredients

  • 100 grams large mild red chillis
  • 1 large red onion, peeled, finely sliced
  • ½ cup plus 2 Tblsp caster sugar
  • 1½ cups water
  • ¼ tsp salt
  • 1-2 tsp minced fresh garlic
  • 2-3 juicy limes, roughly sliced

Method

  1. Deseed the chillies and cut into long thin strips. Place the chillies, onion, sugar, water, salt, garlic and limes into a medium-sized heavy-based saucepan.
  2. Bring to the boil, cook uncovered gently for about 20 minutes or until the marmalade thickens and the vegetables are tender.
  3. Remove from the heat, lift out the lime slices and discard. Pour into a sterilised jar and cool. Store in refrigerator until ready to use
