
Ingredients
- 100 grams large mild red chillis
- 1 large red onion, peeled, finely sliced
- ½ cup plus 2 Tblsp caster sugar
- 1½ cups water
- ¼ tsp salt
- 1-2 tsp minced fresh garlic
- 2-3 juicy limes, roughly sliced
Method
- Deseed the chillies and cut into long thin strips. Place the chillies, onion, sugar, water, salt, garlic and limes into a medium-sized heavy-based saucepan.
- Bring to the boil, cook uncovered gently for about 20 minutes or until the marmalade thickens and the vegetables are tender.
- Remove from the heat, lift out the lime slices and discard. Pour into a sterilised jar and cool. Store in refrigerator until ready to use
