Chicken Sausages In Creamy Thyme Sauce

A quick way to turn basic chicken sausages into a fabulous meal.


  • 6 chicken sausages
  • 1 large onion, peeled and sliced
  • 2 tsp minced garlic
  • ½ cup sweet Sherry or Marsala
  • ½ cup raisins or currants
  • ½ cup each chicken stock and sour cream or crème fraiche
  • 2 tblsp chopped fresh thyme or use 2 tsp dried
  • 1 tsp prepared mustard


  1. Cook the chicken sausages in a knob of butter or dash oil in a lidded frying pan, over a gentle heat for 10 minutes, turning occasionally until just cooked. Set aside.
  2. Add the onions and cook over a gentle heat for 5 minutes until the onions have begun to wilt and soften. Add the garlic Sherry or Marsala, raisins or currants, stock, sour cream or cr?me fraiche, thyme and mustard and simmer for about 2 minutes.
  3. Return the sausages to the saucepan and warm through until thoroughly cooked. Serve with plenty of mashed potatoes and steamed green vegetables.
