Chicken Drumsticks In Cider And Honey

Ingredients

  • 8 chicken drumsticks
  • 3-4 tablespoons seasoned flour
  • oil for frying
  • 1 leek, trimmed, washed and diced
  • 1 carrot, peeled and diced
  • 2 stalks celery, sliced
  • 1 apple, grated
  • 2 cups medium-sweet cider
  • 1 tblsp honey
  • ΒΌ cup celery leaves or parsley leaves, finely sliced
  • pepper to season

Method

  1. Toss chicken drumsticks in seasoned flour. Pan fry in a dash of oil in a lidded frying pan until golden on all sides.
  2. Add leek, carrot, celery and apple to the pan. Pour over cider and honey.
  3. Cover and simmer gently for 30 minutes until golden.
  4. Sprinkle in celery leaves and season with pepper.
  5. Serve with seasonal vegetables and couscous to mop up the juices.

Cooks Tips

- If wished, thicken the sauce with 1-2 tsp cornflour mixed to a smooth paste with a little water. - Add a bouquet garni when simmering the chicken for a herby flavour. - Seasoned flour is simply made by shaking a couple of tablespoons of flour with a good seasoning of salt and pepper and maybe a pinch of dried mustard powder if you have it to hand.
