Chia Seed Bircher Muesli

Chia seeds - a relative of the mint family - are tiny black or white seeds whose origin is South American. Usually consumed by swelling in liquid, chia seeds can also be toasted and scattered on a salad adding a delightful crunch. Once softened in liquid – fruit juice, milk, water - chia seeds, which are high in vegetable protein and fibre (and calcium) are easily digested and, as they release their energy slowly, they help keep blood sugar levels stable

Ingredients

  • ½ cup water
  • ½ cup fruit juice (I used apricot nectar)
  • 1/2 cup rolled oats
  • 2 tablespoons chia seeds
  • 1 small eating apple, peeled and grated

Optional extras

  • Dash vanilla essence or vanilla paste
  • Toasted nuts such as Brazil or almond
  • Fruit

Method

  1. In a small bowl stir together the water, fruit juice, oats, chia seeds and grated apple. Cover and refrigerate overnight. Enjoy with yoghurt and fruit or your choice and toasted nuts if wished. If wishes the oat mixture can be stirred into one cup of yoghurt as opposed to being accompanied with the yoghurt.
