Cherry gravy

Cherry gravy

Serve with gravy with Cherry seasoned rolled roast belly pork.

Ingredients

  • ¼ cup flour
  • 1 cup red wine
  • 2 cups chicken stock
  • 1 cinnamon stick or ¼ teaspoon cinnamon (optional)
  • 2 cups fresh or frozen cherries, roughly chopped

Method

  1. Pour the fat and juice from the roasting dish into a small jug. It will separate into meat juices and fat. Pour 4 tablespoons of fat back into the pan, discarding the rest but keeping the meat juices.
  2. Add the flour and cook, stirring for 1 minute.
  3. Stir in the red wine, chicken stock, any reserved meat juices and cinnamon stick. Simmer gently for 10 minutes.
  4. Add the cherries and season with pepper and a pinch of sugar. Remove the cinnamon stick.
