
Serve with gravy with Cherry seasoned rolled roast belly pork.
Ingredients
- ¼ cup flour
- 1 cup red wine
- 2 cups chicken stock
- 1 cinnamon stick or ¼ teaspoon cinnamon (optional)
- 2 cups fresh or frozen cherries, roughly chopped
Method
- Pour the fat and juice from the roasting dish into a small jug. It will separate into meat juices and fat. Pour 4 tablespoons of fat back into the pan, discarding the rest but keeping the meat juices.
- Add the flour and cook, stirring for 1 minute.
- Stir in the red wine, chicken stock, any reserved meat juices and cinnamon stick. Simmer gently for 10 minutes.
- Add the cherries and season with pepper and a pinch of sugar. Remove the cinnamon stick.
