Cheesy Potato And Kumara Layer

Basics made delicious very simply.


  • 750 grams potatoes, even-sized and well scrubbed
  • 300 grams kumara, scrubbed
  • 4-5 lean bacon rashers, rind removed
  • 1 medium-sized leek, trimmed
  • 1 cup grated cheddar cheese
  • ¾ cup cream


  1. Boil the potatoes and kumara in their skins for 10 minutes. Drain and slice the potatoes into 0.5cm slices. Cool the kumara, peel and slice into 0.5cm slices. (Peeling the potato is optional).
  2. Grill the bacon until golden. Slice finely.
  3. Halve the leek lengthwise, wash well and slice finely.
  4. Layer the potato, kumara, leek and bacon in a greased oven-proof dish, finishing with a layer of potatoes and cheese. Pour over the cream and season with salt and pepper.
  5. Bake at 200°C for 30 minutes or until the potatoes are tender.
