Cheese Truffles

Cheese Truffles

Rather rich, but smooth and tasty these cheese nibbles are ideal to include on an antipasto platter. Open a glass of champagne to begin the celebrations.

Ingredients

  • 150 gram tub blue cheese and chives cream cheese spread
  • 1/2 cup cream
  • 200 grams Parmesan cheese, finely grated
  • 4 egg yolks
  • 70 gram packet walnuts, toasted and finely chopped
  • 1 tblsp chopped chives
  • 1/4 cup raisins or sultanas, finely chopped

Method

  1. Heat the blue cheese spread and cream in a saucepan until very hot. Whisk in the egg yolks and cook until thickened, but do not boil. Remove from the heat, stir in the grated Parmesan cheese and stir until melted.
  2. Stir in the walnuts, chives and raisins. Allow the mixture to cool and then place in a sealed container in the refrigerator overnight or until firm enough to roll into balls.
  3. Roll teaspoonfuls of the mixture into a balls and if wished roll in chopped parsley.

Antipasto Platter

  1. There is a wide range of deli-bought ingredients that can go to make up an antipasto platter. Our platter included marinated artichokes, olives, salami, bier sticks, hummus and our Cheese Truffles.

Cooks Tips

Once you have separated the eggs, freeze the egg white for later use to make a Pavlova or meringues, ideal in summer with fresh seasonal berries.
