
This quick version is ideal for those frantic mid-week nights to jazz up a piece of grilled chicken, fish or lamb steak.
Ingredients
- 1 cup peanut butter, crunchy
- ¾-1 cup coconut milk
- 2 tablespoons Indonesian soy sauce
- 2 teaspoons minced fresh ginger
Method
- Combine all the ingredients together in a bowl. Whisk until smooth adding more coconut milk or warm water if a thinner satay is required. Serve immediately.
Cooks Tips
- If you do not have the sweeter thicker-style Indonesian soy sauce (also called Kecap Manis), use dark Chinese soy and 1-2 tablespoons of brown sugar to sweeten.
