Tropical joins Italian for this tasty bite.
Ingredients
- 3 ripe mangoes
- 120 grams thinly sliced prosciutto
- olive oil
- ½ small red onion, finely chopped
- 1 medium red chilli, finely chopped (or ½ tsp minced)
- 2-3 tblsp freshly squeezed lime or lemon juice
- 2 tblsp freshly chopped coriander
- extra limes to serve
Method
- Cut down each side of the mango stone to get two rounds of mango. Peel.
- Finely chop the mango left attached to the stone for salsa
- Cut each round in half lengthways, wrap with prosciutto and secure with a toothpick. Brush the prosciutto lightly with olive oil and fan grill on a medium-high heat for 8-10 minutes until the prosciutto is crispy. Discard toothpicks.
Salsa
- Combine the red onion, chilli, lime juice, coriander and chopped mango, mix well.
- Arrange 3 pieces of mango on each plate, sprinkle with salsa and serve with wedges of lime. Serve warm.
