Chargrilled Mango And Prosciutto

Tropical joins Italian for this tasty bite.


  • 3 ripe mangoes
  • 120 grams thinly sliced prosciutto
  • olive oil
  • ½ small red onion, finely chopped
  • 1 medium red chilli, finely chopped (or ½ tsp minced)
  • 2-3 tblsp freshly squeezed lime or lemon juice
  • 2 tblsp freshly chopped coriander
  • extra limes to serve


  1. Cut down each side of the mango stone to get two rounds of mango. Peel.
  2. Finely chop the mango left attached to the stone for salsa
  3. Cut each round in half lengthways, wrap with prosciutto and secure with a toothpick. Brush the prosciutto lightly with olive oil and fan grill on a medium-high heat for 8-10 minutes until the prosciutto is crispy. Discard toothpicks.


  1. Combine the red onion, chilli, lime juice, coriander and chopped mango, mix well.
  2. Arrange 3 pieces of mango on each plate, sprinkle with salsa and serve with wedges of lime. Serve warm.
