The dressing on these tomatoes is like a Bloody Mary cocktail - minus the vodka!
Ingredients
- 1 punnet cherry tomatoes
- 1 punnet yellow cherry tomatoes
- 4 cloves garlic, crushed, peeled and sliced
- large handful or two fresh parsley or celery leaves
- Dressing
- ¼ cup vinegar
- ¼ cup tomato sauce
- ¼ cup oil
- 1 tablespoon Worcestershire sauce
- 1 tablespoon lemon juice
Method
- Preheat the oven to 220C. Line a baking tray with foil.
- Halve half the tomatoes and place them with the whole tomatoes and garlic slices on the prepared tray. Bake in the preheated oven for 10 minutes.
- Arrange casually on a lettuce-lined deep serving platter or shallow bowl, scatter over the parsley or celery leaves and pour over the dressing. Serve warm with summer grills.

- In a jar shake together the vinegar, tomato sauce, oil, Worcestershire sauce and lemon juice.
Cooks Tips
Jazz it up, toss the tomatoes with ½ teaspoon celery seeds before baking. Scatter over crumbled crispy cooked bacon rashers before serving. Try some feta cheese with this salad.
