Chargrilled cherry tomato salad

The dressing on these tomatoes is like a Bloody Mary cocktail - minus the vodka!

  • 1 punnet cherry tomatoes
  • 1 punnet yellow cherry tomatoes
  • 4 cloves garlic, crushed, peeled and sliced
  • large handful or two fresh parsley or celery leaves
  • Dressing
  • ¼ cup vinegar
  • ¼ cup tomato sauce
  • ¼ cup oil
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon lemon juice

  1. Preheat the oven to 220C. Line a baking tray with foil.
  2. Halve half the tomatoes and place them with the whole tomatoes and garlic slices on the prepared tray. Bake in the preheated oven for 10 minutes.
  3. Arrange casually on a lettuce-lined deep serving platter or shallow bowl, scatter over the parsley or celery leaves and pour over the dressing. Serve warm with summer grills.
  4. Dressing
  5. In a jar shake together the vinegar, tomato sauce, oil, Worcestershire sauce and lemon juice.

Cooks Tips

Jazz it up, toss the tomatoes with ½ teaspoon celery seeds before baking. Scatter over crumbled crispy cooked bacon rashers before serving. Try some feta cheese with this salad.
