Champagne Jellies

Fresh fruit jellies make a refreshing dessert and by preparing them with Lindauer Fraise strawberry bubbles, there is no need to cook fruit to make the jelly, so you can easily whip this dessert up a few hours prior to entertaining. If you do not have tall glasses, the jelly can be set in a square dish, cut into chunks when set and served with fresh strawberries in bowls.

Ingredients

  • 2 tblsp gelatin
  • ½ cup water
  • 4 200ml bottles Lindauer Fraise
  • ¼ cup orange liqueur
  • 1 tblsp honey
  • ½ punnet strawberries, hulled and quartered

Method

  1. Sprinkle the gelatin over the water and allow the mixture to settle. Warm over hot water or in the microwave on high power for about 15 seconds and stir to dissolve the gelatin to a smooth mixture.
  2. Pour 1 bottle of Lindauer into a large bowl and stir in the orange liqueur and honey until dissolved. Carefully pour in the remaining bottles of Lindauer. Stir in the cooled but smooth gelatin. Skim off any scum that rises to the top.
  3. Cut the strawberries into quarters and drop the pieces evenly into 8 tall champagne-style glasses. Pour in the Lindauer and gelatin mixture. The strawberries will rise to the top. Transfer to the refrigerator to set. This will take about 3 hours, and during this time, take a skewer or bamboo stick and as the jelly begins to set, push the fruit down into the setting jelly. Once set, serve topped with a little whipped cream, creme fraiche or marscarpone.
