This cake is made with mayonnaise, making it a dairy free cake.
Ingredients
- 1 cup grated carrot
- 1 cup raisins
- 432 gram can crushed pineapple
- 1 1/2 cups flour
- 1 tsp baking soda
- 1 tsp ground mixed spice
- 3 eggs
- 3/4 cup mayonnaise
- 1 cup sugar
- 1 tsp vanilla essence
Method
- Place carrot and raisins in a bowl. Drain pineapple and add to bowl. Sift over flour, baking soda and mixed spice.
- Beat eggs, mayonnaise, sugar and vanilla essence together in a bowl.
- Combine carrot mixture and egg mixture.
- Pour into a greased, base-lined 20cm cake tin. Bake at 180 degrees C for 40 to 45 minutes or until a skewer inserted in the centre of the cake comes out clean. Cool on a wire rack.
