Carrot, Pineapple And Raisin Cake

This cake is made with mayonnaise, making it a dairy free cake.

Ingredients

  • 1 cup grated carrot
  • 1 cup raisins
  • 432 gram can crushed pineapple
  • 1 1/2 cups flour
  • 1 tsp baking soda
  • 1 tsp ground mixed spice
  • 3 eggs
  • 3/4 cup mayonnaise
  • 1 cup sugar
  • 1 tsp vanilla essence

Method

  1. Place carrot and raisins in a bowl. Drain pineapple and add to bowl. Sift over flour, baking soda and mixed spice.
  2. Beat eggs, mayonnaise, sugar and vanilla essence together in a bowl.
  3. Combine carrot mixture and egg mixture.
  4. Pour into a greased, base-lined 20cm cake tin. Bake at 180 degrees C for 40 to 45 minutes or until a skewer inserted in the centre of the cake comes out clean. Cool on a wire rack.
