Ingredients
- 500 grams lean minced beef
- 3 tablepoons Cajun spice mix
- 2 teaspoons minced garlic
- 1 egg
- 1 teaspoon each salt and pepper
- 600 grams tomato-based pasta sauce
- 1 cup chicken stock
- 1 cup corn kernels
- 2 courgettes, trimmed and sliced
Method
- Mix the minced beef, Cajun spice, garlic, egg and salt and pepper together. Mould into 24-28 even-sized balls.
- Pan-fry in a dash of oil until golden all over.
- Add the pasta sauce, stock, corn and courgettes. Simmer for 20 minutes until cooked.
- Serve garnished with avocado slices, sour cream and coriander.
