Cajun hot pot

Ingredients

  • 500 grams lean minced beef
  • 3 tablepoons Cajun spice mix
  • 2 teaspoons minced garlic
  • 1 egg
  • 1 teaspoon each salt and pepper
  • 600 grams tomato-based pasta sauce
  • 1 cup chicken stock
  • 1 cup corn kernels
  • 2 courgettes, trimmed and sliced

Method

  1. Mix the minced beef, Cajun spice, garlic, egg and salt and pepper together. Mould into 24-28 even-sized balls.
  2. Pan-fry in a dash of oil until golden all over.
  3. Add the pasta sauce, stock, corn and courgettes. Simmer for 20 minutes until cooked.
  4. Serve garnished with avocado slices, sour cream and coriander.
