Caesar salad with smoked salmon

It's hard to find two Caesar Salads the same, although the recipe is relatively simple. Caesar Salad is made with Cos lettuce, anchovies, Parmesan cheese, croutons and a tasty dressing. Occasionally, a gently cooked boiled egg goes into the dressing, or maybe into the salad. As I am not an anchovy lover. I have made my Caesar Salad with smoked salmon.

Ingredients

  • 1 Cos lettuce, washed and crisp
  • 3 eggs
  • 250 grams sliced smoked salmon
  • approximately ¼ cup extra grated Parmesan cheese to garnish
  • coarsley ground black pepper

Dressing

  • ½ cup freshly grated Parmesan cheese
  • 3 cloves garlic, crushed and peeled
  • 1 egg yolk
  • 1 teaspoon Worcestershire sauce
  • ¾ cup olive oil
  • 50 gram can anchovies, optional

Croutons

  • ¼ French bread stick
  • ¼ cup olive oil or butter

Method

  1. Tear the Cos lettuce into pieces and place in a large salad bowl.
  2. Cook the eggs in boiling water for 3 minutes. Set aside in cold water for about 2 minutes and peel.
  3. Toss the smoked salmon slices into the Cos lettuce with the dressing. Add eggs. Sprinkle over the extra grated Parmesan cheese and season with coarsley ground black pepper.

Dressing

  1. Place all the ignredients into a blender and process until thick and creamy. If the dressing is too thick, add a little hot water.

Croutons

  1. Slice the French bread into 1cm slices and cut in half.
  2. Heat the olive oil or butter in a frying pan and cook until crispy and golden.

Cooks Tips

- In place of salmon, use bacon (roll the bacon into little rolls and pan fry in a little oil until crisp), a double breast of smoked chicken, sliced finely, or smoked venison, beef or pork slices.
