This salad can be served as a side dish or add some meat to create a great meal.
Ingredients
- 500 grams frozen broad beans
- 1-2 red peppers, grilled and diced
- 1-2 yellow peppers, grilled and diced
- 1 small red onion, diced
- 1 cup toasted walnuts, chopped
- ½-¾ cup of your favourite vinaigrette
- grated rind 1 large lemon
- 4 small baby cos lettuces or 1 large cos lettuce
- 150 grams haloumi cheese
- 2 tblsp lemon juice
- 3 tblsp olive oil
- salt and ground black pepper
Method
- Blanch broad beans, refresh in cold water and peel.
- Mix the tender green beans with red and yellow peppers, red onion and the walnuts with vinaigrette and lemon.
- Quarter small baby cos lettuces or separate 1 large lettuce into separate leaves. Rinse and shake dry and place on 4 serving plates. Scatter over the bean salad.
- Finely slice haloumi cheese and pan-fry in a hot non-stick fryingpan until just golden on both sides. Divide the cheese among the plates and service immediately with plenty of pepper on the side. Accompany with crusty bread.
Cooks Tips
To add a meaty note to this salad, add grilled and diced bacon or salami or sliced grilled sausages.
