Breakfast salad greens

Get a healthy boost to start your day from a salad prepared from herbs, bitter or hot salad leaves and plenty of sprouts. Pictured here with Mexican fish cakes with avocado salsa.


  • several handfuls of rocket leaves, washed
  • a couple of handfuls or baby beetroot leaves or chopped cos lettuce
  • a handful of snow pea sprouts
  • ½ cup coarsley chopped parsley leaves
  • ½ red onion, peeled and very finely sliced
  • sweet honey dressing
  • 2 tablespoons lemon juice
  • 2 tablespoons runny honey
  • 2 tablespoons oil, olive is nice


  1. Arrange the rocket leaves and beetroot leaves or cos lettuce on a platter and scatter over the sprouts, parsley and red onion.
  2. Sweet honey dressing
  3. Stir the ingredients together and season with a little mustard, salt and pepper, if wished.
  4. Drizzle the salad with the sweet honey dressing and serve.
