Get a healthy boost to start your day from a salad prepared from herbs, bitter or hot salad leaves and plenty of sprouts. Pictured here with Mexican fish cakes with avocado salsa.
Ingredients
- several handfuls of rocket leaves, washed
- a couple of handfuls or baby beetroot leaves or chopped cos lettuce
- a handful of snow pea sprouts
- ½ cup coarsley chopped parsley leaves
- ½ red onion, peeled and very finely sliced
- sweet honey dressing
- 2 tablespoons lemon juice
- 2 tablespoons runny honey
- 2 tablespoons oil, olive is nice
Method
- Arrange the rocket leaves and beetroot leaves or cos lettuce on a platter and scatter over the sprouts, parsley and red onion.
- Sweet honey dressing
- Stir the ingredients together and season with a little mustard, salt and pepper, if wished.
- Drizzle the salad with the sweet honey dressing and serve.
