Boysenberry And Honey Yoghurt

Yummy hints of almond with the smoothness of yoghurt and the sharpness of berries.


  • 250 grams boysenberry yoghurt
  • ½ cup crème fraiche
  • 2 tblsp honey
  • 250 grams boysenberries (fresh or frozen)
  • 100 grams amaretti biscuits


  1. Gently mix the boysenberry yoghurt and crème fraiche together. Sweeten to taste with honey.
  2. Crush the amaretti biscuits roughly and scatter a few in the base of four serving glasses. Top each with a few boysenberries and then a few spoonfuls of the boysenberry cream. Repeat the layers. Serve garnished with plain yoghurt if wished.

Cooks Tips

• I used baby amaretti biscuits here called amarettini. You may find them in supermarkets or delicatessens. They last for ages in the cupboard. In place of amaretti biscuits use crushed meringues or even Krispies. • When using frozen berries allow them to defrost on a tray, covered, on the bench. Frozen berries will bleed more than fresh ones.
