Blueberry And Creme De Cassis Granita

An easy-to-make dessert with the tang of berries.


  • 1 cup sugar
  • 1 cup water
  • 500 grams blueberries or blackcurrants, washed
  • ¼ cup crème de cassis


  1. Stir the sugar and water in a saucepan over a low heat until dissolved. Add blueberries or blackcurrants and poach gently for 3-4 minutes, until the berries have softened, but not mushy. Add the creme de cassis and blend in a food processor until smooth.
  2. Strain through a sieve. Pour into a plastic lidded container and freeze. Remove from the freezer, run a fork over the blueberry ice and flake. Serve in chilled glasses.
