Blending butter and olive oil together gives you a good base for this garlic pizza bread. To vary the base recipe add the herbs such as basil, chives, parsley, chervil, tarragon or spices like curry powder, mustard or nigella seeds.
Ingredients
- 1 quantity basic pizza dough
- 50-75 grams butter, softened
- ¼ cup virgin olive oil
- 2-4 cloves garlic, crushed and peeled
- flaky sea salt
Method
- Prepare the pizza dough. While it is rising, prepare the garlic butter.
- Process the butter, oil and garlic together in a small food processor until smooth. Alternatively, mash the garlic to a paste with a pinch of salt and beat with the butter and oil until smooth.
- Once the dough is ready, turn out, divide into half, thirds or quarters and roll each out to about 0.5cm-1cm thick. Place on a baking paper-lined tray or preheated pizza stone. Spread liberally with the garlic butter mixture and sprinkle with flaky sea salt. Use a pizza wheel to cut the mixture into 6 or 8 wedges.
- Fan bake at 230ºC towards the top of the oven for 5-6 minutes until hot and golden. For a crispier bread, cook for an extra 1-2 minutes. Serve hot.
