Best basil and lemon chicken

Ever-so-easy, very delicious and perfect for summer. Chicken thigh or leg portions can also be used.


  • 4-5 chicken breasts, skin on
  • 50 grams butter, softened
  • ¼ cup chopped fresh basil
  • grated rind 1 lemon
  • ½ teaspoon ground white pepper
  • 2 rashers bacon, sliced (optional)


  1. Preheat the oven to 180ºC.
  2. Place the chicken breasts (skin side up) in a deep ovenproof dish. Mix the butter, basil, lemon rind and pepper together. Spread ¼ of the mixture evenly under the skin of each chicken breast. Scatter over the bacon if using.
  3. Bake in the preheated oven for 35-40 minutes or until the chicken is cooked and tender. Garnish with fresh basil leaves to serve.

Cooks Tips

- Chicken breast portions range in size considerably, so take the total weight into account when buying for your home. Allow about 150-200 grams (uncooked) chicken per person. - Sprinkle over 2-3 tablespoons pine nuts before baking or mix ¼ teaspoon chilli flakes into the butter for a gentle kick.
