Avocado oil adds a delicate flavour to the sauce which dresses a plain steak for dinner.
Ingredients
- 4 steaks, such as sirloin
 - olive oil for cooking
 
Avocado and Herb Sauce
- 1 tsp minced garlic
 - 2 cups firmly packed parsley leaves with stalks
 - ½ cup firmly packed mint leaves
 - 1 tblsp capers
 - 1 tblsp prepared mustard
 - 6 tblsp avocado oil
 
Method
- Season the steaks by tossing with the olive oil, salt and pepper if wished.
 - Place the minced garlic, parsley, mint, capers and mustard into a food processor and whiz to mix. With the motor running, gradually pour the oil down the feed tube to make a thick paste. Season with salt and pepper.
 - Barbecue, panfry or grill the steak until done to your liking and serve with salad vegetables and the Avocado and Herb Sauce.
