
There's a fresh Mediterranean flavour to this salad.
Ingredients
- ½ - ¾ cup olive oil (extra virgin is nice here)
- 1 long red chilli, deseeded and finely chopped
- grated rind one lemon
- 1 tblsp chopped fresh thyme
- 1 tblsp chopped fresh oregano
- 200 grams feta, cubed
- 6 small tomatoes, quartered
- 12 juicy black olives
- 2 cups rocket leaves or mixed lettuce leaves
- ½ red onion, peeled and finely sliced
- ½ cup torn basil leaves
- freshly ground black pepper
Method
- Mix together the olive oil, chilli, lemon rind, thyme and oregano and toss with the feta, Cover and allow to marinate for 1-2 hours at room temperature, any longer then refrigerate.
- Toss together the tomatoes, olives, rocket leaves, red onion and basil leaves. Arrange on a serving platter before topping with the feta and seasoning with pepper. Drizzle over any excess marinade.
