Basil-marinated feta salad

Basil-marinated feta salad

There's a fresh Mediterranean flavour to this salad.


  • ½ - ¾ cup olive oil (extra virgin is nice here)
  • 1 long red chilli, deseeded and finely chopped
  • grated rind one lemon
  • 1 tblsp chopped fresh thyme
  • 1 tblsp chopped fresh oregano
  • 200 grams feta, cubed
  • 6 small tomatoes, quartered
  • 12 juicy black olives
  • 2 cups rocket leaves or mixed lettuce leaves
  • ½ red onion, peeled and finely sliced
  • ½ cup torn basil leaves
  • freshly ground black pepper


  1. Mix together the olive oil, chilli, lemon rind, thyme and oregano and toss with the feta, Cover and allow to marinate for 1-2 hours at room temperature, any longer then refrigerate.
  2. Toss together the tomatoes, olives, rocket leaves, red onion and basil leaves. Arrange on a serving platter before topping with the feta and seasoning with pepper. Drizzle over any excess marinade.
