Basic Herb Stuffing

Vary this recipe by adding fruit or nuts to the mixture.


  • 1 onion, peeled and finely chopped
  • 1 teaspoon minced garlic
  • 4 slices stale wholemeal bread, coarsely crumbed
  • 1 apple, peeled and grated or finely chopped
  • ¼ cup chopped fresh parsley or 2 tablespoons dried parsley
  • 1 tablespoon each chopped fresh sage and oregano (optional)
  • 50 grams butter, melted or 3 tablespoons oil
  • About 1.5 – 1.8 kilogram whole chicken


  1. Cook the onion in a dash of oil for about 8-10 minutes or until the onion is well-cooked and tender. Add the garlic and cook a further minute; remove from the heat and cool.
  2. In a bowl toss together the bread crumbs, apple, herbs and butter or oil and season well.
  3. This is sufficient stuffing for a 1.5 kilogram – 1.8 kilogram chicken.

Cooks Tips

Calculating the cooking time to roast a chicken is easy; allow 30 minutes of cooking time per 500 grams of total weight including stuffing weight plus an extra 20 minutes’ cooking time.
