Ingredients
- 50 grams butter
- 100 grams marzipan
- 1 egg
- 70 gram packet slivered almonds
- 4 ripe peaches
- ¾ cup Amaretto (almond liqueur)
- 2 tblsp sugar
- mascarpone or creme fraiche to serve
Method
- Beat together the butter, marzipan, egg and almonds.
- Halve peaches and remove the stone.
- Pour Amaretto into the base of an ovenproof lasagne-style dish and sprinkle over sugar.
- Arrange the peaches cut side up in the liqueur; they should fit snugly. Fill the peach halves evenly with the marzipan mixture.
- Bake at 180ºC for 15-25 minutes or until tender. Cooking time will depend on the ripeness of the peaches.
- Serve with mascarpone or creme fraiche on the side.
