Baked Peaches With Amaretto Syrup


  • 50 grams butter
  • 100 grams marzipan
  • 1 egg
  • 70 gram packet slivered almonds
  • 4 ripe peaches
  • ¾ cup Amaretto (almond liqueur)
  • 2 tblsp sugar
  • mascarpone or creme fraiche to serve


  1. Beat together the butter, marzipan, egg and almonds.
  2. Halve peaches and remove the stone.
  3. Pour Amaretto into the base of an ovenproof lasagne-style dish and sprinkle over sugar.
  4. Arrange the peaches cut side up in the liqueur; they should fit snugly. Fill the peach halves evenly with the marzipan mixture.
  5. Bake at 180ºC for 15-25 minutes or until tender. Cooking time will depend on the ripeness of the peaches.
  6. Serve with mascarpone or creme fraiche on the side.
