Ever so simple, yet stunningly delicious, Lynley's chicken dish is a wonderful way to make a few shaved slices of truffle go a long way.
Ingredients
- 4 chicken breasts, skin removed
- few shavings of truffle
- 8 rashers streaky bacon
Method
- Preheat the oven to 180ÂșC.
- Use a sharp knife to cut a pocket in the thickest part of each chicken breast. Arrange a few shavings of truffle in each pocket.
- Wrap each breast with 2 rashers of bacon; try crossing the bacon for a professional look. Season with pepper and salt. Place in an ovenproof baking dish and cover with foil.
- Bake in the preheated oven for 30 mintues, then remove the foil and bake for a further 10 minutes or until the chicken is tender and the bacon has browned a little.
- Serve with creamy mashed potatoes and drizzle with a little truffle oil.
Cooks Tips
- Cooking time will depend on the thickness of the chicken breasts. If the chicken breasts are small, check after 20 minutes.
