Baked chicken breast with truffles

Ever so simple, yet stunningly delicious, Lynley's chicken dish is a wonderful way to make a few shaved slices of truffle go a long way.


  • 4 chicken breasts, skin removed
  • few shavings of truffle
  • 8 rashers streaky bacon


  1. Preheat the oven to 180ÂșC.
  2. Use a sharp knife to cut a pocket in the thickest part of each chicken breast. Arrange a few shavings of truffle in each pocket.
  3. Wrap each breast with 2 rashers of bacon; try crossing the bacon for a professional look. Season with pepper and salt. Place in an ovenproof baking dish and cover with foil.
  4. Bake in the preheated oven for 30 mintues, then remove the foil and bake for a further 10 minutes or until the chicken is tender and the bacon has browned a little.
  5. Serve with creamy mashed potatoes and drizzle with a little truffle oil.

Cooks Tips

- Cooking time will depend on the thickness of the chicken breasts. If the chicken breasts are small, check after 20 minutes.
