Bacon And Cranberry Salad

A deliciously different salad with an Italian touch.


  • 12 rashers bacon
  • 1 cup Craisins
  • 3 avocados, peeled, stoned and sliced
  • 2 cups baby spinach leaves
  • 2 pink grapefruit, segmented


  • ¼ cup Cranberry Jelly
  • ½ cup vinaigrette
  • 2 tblsp chopped fresh basil

Lime Pickled Onion

  • 1 red onion, finely sliced
  • 2 limes grated rind and juice
  • 1 tsp salt


  1. Wrap the bacon rashers up in a tight rolls and secure with a toothpick. Cook in a dash of oil in a frying pan until crispy. Set aside.
  2. In a bowl toss together the bacon, cranberries and grapefruit slices in the dressing.
  3. Serve the salad on top of garlic butter-grilled bruschetta slices garnished with pickled onions.


  1. Mix all ingredients together.

Lime Pickled Onions

  1. Toss all ingredients together and stand 30 minutes. Drain.
