A deliciously different salad with an Italian touch.
Ingredients
- 12 rashers bacon
- 1 cup Craisins
- 3 avocados, peeled, stoned and sliced
- 2 cups baby spinach leaves
- 2 pink grapefruit, segmented
Dressing
- ¼ cup Cranberry Jelly
- ½ cup vinaigrette
- 2 tblsp chopped fresh basil
Lime Pickled Onion
- 1 red onion, finely sliced
- 2 limes grated rind and juice
- 1 tsp salt
Method
- Wrap the bacon rashers up in a tight rolls and secure with a toothpick. Cook in a dash of oil in a frying pan until crispy. Set aside.
- In a bowl toss together the bacon, cranberries and grapefruit slices in the dressing.
- Serve the salad on top of garlic butter-grilled bruschetta slices garnished with pickled onions.
Dressing
- Mix all ingredients together.
Lime Pickled Onions
- Toss all ingredients together and stand 30 minutes. Drain.
