Avocado, Brie and smoked chicken muffins

Avocado, Brie and smoked chicken muffins

These muffins are a combination of my favourite savoury ingredients.


  • 125 grams Brie cheese
  • 3 cups flour
  • 2 tablespoons baking powder
  • ½ teaspoon salt
  • 1 teaspoon dried mustard
  • ½ smoked chicken breast, diced
  • 1 avocado, stoned, peeled and diced
  • 1 cup grated Cheddar cheese
  • 2 eggs
  • 1¾ cups milk
  • 100 grams butter, melted and cooled


  1. Dice half the Brie and slice the remaining half.
  2. Sift the flour, baking powder, salt and mustard into a bowl. Stir in the diced Brie, smoked chicken, avocado and grated cheddar cheese and make a well in the centre.
  3. In a jug, mix together the eggs and milk and mix into the dry ingredients, with the melted butter.
  4. Divide the mixture evenly among 12 well-greased muffin tins and top each with a slice of Brie.
  5. Bake at 220ºC for 18-20 minutes until well risen and golden. Cool in the tins for 5 minutes before enjoying.

Cooks Tips

- Add some chopped fresh herbs, about ¼ cup, choosing from herbs like chives, parsley, dill or chervil.
