Ingredients
- 2 cloves garlic, peeled and mashed
- 2 teaspoons minced fresh ginger
- 2 tablespoons oil
- 2 tablespoons light soy sauce
- 500 grams pork schnitzel, finely sliced
- ½ cup finely sliced shallots
- 4 bok choy, sliced
- ¼ cup each black bean sauce and chicken stock
- 2 tablespoons finely chopped black olives
- 1 tablespoon capers, finely chopped
- 2 tablespoons chopped fresh coriander
Method
- Combine the garlic, ginger, oil and soy sauce and toss through the schnitzel. Stand 30 minutes.
- Pan fry the schnitzel and shallots over a moderately high heat until browned. Transfer to a plate.
- Add the bok choy to the pan and cook for 2 minutes. Return the meat to the pan with the black bean sauce, stock, olives, capers and coriander. Toss only until hot. Serve over pan-fried noodles or rice.
