Asian Pork Sausages With Plum Sauce

Ingredients

  • 1 red chilli, deseeded and finely chopped
  • 2 tsp grated ginger
  • 1 tblsp Asian Fish Sauce
  • 1-2 spring onions, finely diced
  • ΒΌ cup chopped fresh coriander
  • 500 grams pork mince
  • oil to panfry
  • 1-2 tsp sesame oil
  • 1 tsp finely chopped red chilli
  • 1 tsp grated ginger
  • 400 gram can plums, drained and stoned
  • 2 tblsp chopped fresh coriander

Method

  1. In a bowl mix the red chilli, ginger, fish sauce, spring onions, coriander and pork mince.
  2. With wet hands shape the mixture into sausages. Pan-fry in a little oil, turning until golden.
  3. In a small saucepan, heat the sesame oil and gently pan fry the red chilli and ginger for a few minutes until tender.
  4. Roughly mash the plums and stir into the saucepan with the ginger and coriander and warm through.
  5. Serve the sausages on top of the noodles with the plum sauce.

Very enjoyable, and will have again. However, I did find the mixture didn't bind so added an egg and cooked as a pattie.
