Asian pesto drumsticks

Asian pesto drumsticks

Chicken drumsticks well loved by most families, take on a special dimension when tossed with the Asian pesto and baked.


  • 8 chicken drumsticks
  • 1 cup Asian Pesto (see DIY recipes on my website)


  • 2-3 small tomatoes
  • 1-2 lime cheeks
  • ½ cup roasted peanuts or cashew nuts
  • ½ cup fresh mint leaves or kaffir lime leaves


  1. Preheat the oven to 180ºC. Line a baking tray with baking paper or foil.
  2. Cut 2-3 deep slashes into each chicken drumstick. Toss with half the pesto and a dash of oil. Place in a single layer on the prepared tray.
  3. Bake in the preheated oven for 30-35 minutes or until the drumsticks are well-cooked and golden.
  4. Pile onto a serving platter, turking the tomatoes, lime cheeks, roasted peanuts or cashews and mint or kaffir lime leaves around the chicken. Drizzle the remaining Asian pesto over the drumsticks and serve.
