Apricots in brandy and orange

Make use of canned apricots with this recipe.


  • 2 x 425 gram cans apricots in light syrup
  • ½ cup brandy
  • 1 orange (grated rind and juice)


  1. Drain the apricots well, reserving the syrup. Place the apricots in a serving dish.
  2. Take half the syrup (discard the rest) and mix with the brandy, orange rind and juice. Bring to the boil (microwave or on the stove) and simmer for 2 minutes. (This is to soften the brandy taste and leave you with the subtle under flavour).
  3. Cool the syrup for 5 minutes and pour over the apricots. Leave until ready to serve. Delicious with Black & White Amaretti biscuits.
