Apricot Orange Cake

Apricot Orange Cake

This cake is made with Mayonnaise making it dairy free cake.


  • 1 cup dried apricots
  • 2 tsp grated orange rind
  • 1 cup orange juice
  • 1 1/4 cups flour
  • 1 tsp baking powder
  • 1/2 cup desiccated coconut
  • 1 cup mayonnaise
  • 1 cup caster sugar
  • 1 tsp vanilla essence
  • 3 eggs


  1. Chop the apricots roughly and place in a bowl with the orange rind. Heat the orange juice and pour over the apricots. Leave to cool.
  2. Sift flour and baking powder and add to apricot mixture with coconut.
  3. Beat mayonnaise, sugar, vanilla and eggs together in a small bowl. Add to apricot mixture and combine. Pour into a greased base-lined 20cm cake tin. Bake at 160 degrees C for 50 minutes to 1 hour or until a skewer inserted into cake centre comes out clean. Cool in tin for 10 minutes. Turn out onto a wire rack.
