This slice is a great addition to the children's school lunch box.
Ingredients
- 125 grams butter
- 3/4 cup brown sugar
- 1/2 cup liquid honey
- 1/2 cup peanut butter (either crunchy or smooth)
- 1/4 cup finely chopped dried apricots
- 1/4 cup sunflower seeds
- 2 tblsp sesame seeds
- 4 wheetbix, crushed
- 2 cups rice bubbles
- 1 cup coconut
Method
- Grease and line a 30cm x 20cm swiss roll tin.
- Place butter, brown sugar, honey and peanut butter in saucepan and stir over a low heat until sugar is dissolved. Simmer 1-2 minutes, stirring often.
- Remove from heat and stir in the apricots, sunflower seeds and sesame seeds and set aside to cool a little.
- Stir in the wheatbix, rice bubbles and coconut. Press into the prepared tin. Refrigerate overnight. Cut into bars when set. Keep in the refrigerator or in a very cool place.
