Apricot Muesli Bars

  • Makes 30 slices
Apricot Muesli Bars

This slice is a great addition to the children's school lunch box.

Ingredients

  • 125 grams butter
  • 3/4 cup brown sugar
  • 1/2 cup liquid honey
  • 1/2 cup peanut butter (either crunchy or smooth)
  • 1/4 cup finely chopped dried apricots
  • 1/4 cup sunflower seeds
  • 2 tblsp sesame seeds
  • 4 wheetbix, crushed
  • 2 cups rice bubbles
  • 1 cup coconut

Method

  1. Grease and line a 30cm x 20cm swiss roll tin.
  2. Place butter, brown sugar, honey and peanut butter in saucepan and stir over a low heat until sugar is dissolved. Simmer 1-2 minutes, stirring often.
  3. Remove from heat and stir in the apricots, sunflower seeds and sesame seeds and set aside to cool a little.
  4. Stir in the wheatbix, rice bubbles and coconut. Press into the prepared tin. Refrigerate overnight. Cut into bars when set. Keep in the refrigerator or in a very cool place.
