Apricot French Toast

Apricot French Toast

Spiced French Toast served hot with fruit is perfect for a lazy brunch.

Ingredients

  • 1 egg
  • ½ cup cream
  • 3 tablespoons Grand Marnier (orange liqueur)
  • 3 tablespoons icing sugar
  • 8 thick slices of white bread
  • 400 gram can apricot halves, well drained

Cinnamon Sugar

  • ¼ cup caster sugar
  • 2 teaspoons ground cinnamon

Method

  1. Mix together the egg, cream, Grand Marnier and icing sugar. Dip the bread slices into the egg mixture to coat well but do not allow to become too sodden.
  2. Heat a little butter in a non-stick pan and pan fry the bread for 2-3 minutes on each side until golden. Keep warm in a preheated - about 120 degrees C - oven.
  3. Pan fry the well-drained apricot halves, cut side down until golden brown and warm. Serve the toast with the apricot halves, ice cream and sprinkle of cinnamon sugar.

Cinnamon Sugar

Stir the sugar and cinnamon together. Perfect on French toast or in an apple pie, you could also make a bigger quantity and keep it in an airtight container.

Cooks Tips

Variation: A crusty French baguette, cut diagonally into 2cm slices, makes a crispy alternative to white bread.
