Apricot Chicken Salad

Smoked chicken dressed up for a rosette-winning lunch.


  • 1 smoked chicken
  • 6 apricots, stoned and thickly sliced
  • 200 grams blanched beans or snowpeas
  • 4 spring onions, finely sliced
  • salad leaves for 4


  • ¼ cup apricot jam
  • 1 tblsp curry powder or paste
  • ½ cup mayonnaise
  • ¼ cup sour cream or whipped cream (optional)


  1. Pull the meat from the smoked chicken and cut into large chunks.
  2. Place in a bowl with the apricots, snow peas, spring onions and salad leaves and toss to mix.
  3. Serve in deep plates and bowl garnished with a spoonful of the Creamy Apricot Mayonnaise.

Creamy Apricot Mayonnaise

  1. Combine all ingredients gently.
