10 Minute Summer Tarts

There are plenty of variations for these simple tarts for example try passionfruit pulp (fresh or bottled).


  • ½ cup mascarpone or creme fraiche
  • ½ cup lemon honey (lemon curd)
  • 16 prepared baby sweet tartlets
  • 200 grams raspberries and or blueberriesraspberries and or blueberries
  • icing sugar for dusting


  1. Mix the mascarpone or creme fraiche with the lemon honey or curd.
  2. Fill each tartlet case to the top with some of the mixture.
  3. Top each tartlet with raspberries/blueberries and dust with icing sugar just before serving.
  4. Tartlets can be served immediately, or can be refrigerated up to two hours before serving.
