Fig And Orange Jam

Fresh figs make a delightful jam.

Ingredients

  • 1 kg fresh figs
  • 3 oranges
  • 2 tblsp lemon juice
  • 1 kg sugar

Method

  1. Trim the end stalks from the figs and cut the fruit into 2cm dice. Grate the rind from the oranges. Cut away the white pith and then segment the orange.
  2. Put the figs, orange rind and segments and lemon juice into a bowl with the sugar. Cover and leave overnight.
  3. Next day place into a preserving pan and slowly bring to the boil, stirring regularly until the sugar has dissolved. Bring to the boil skimming off any scum as it rises, and boil for about 20 minutes, until the jam reaches setting point Allow the bubbles to subside and then bottle into hot sterilised jars Seal and label.

Cooks Tips

- It is time to test to see if setting point has been rached when the jam no longer pours from a spoon but falls in a couple of drops. To test, pour a teaspoonful on a cold saucer, run your finger through the centre and, if it leaves a channel, the jam is ready.
