Queen Cakes

These cakes are a variation on a Cup Cake.

Ingredients

  • 125 grams butter
  • 1/2 cups sugar
  • 1/2 teaspoons vanilla essence
  • 2 eggs
  • 1/3 - 1/2 cup milk
  • 1 1/4 cups flour
  • 1 teaspoon baking powder
  • 1/2 cup currants

Method

  1. Cream butter and sugar until white, light and fluffy. Add vanilla essence.
  2. Beat in eggs one at a time.
  3. Add milk slowly, then sifted dry ingredients and currants.
  4. Half fill paper cases or patty pans. Bake at 210 deg C for 10-15 minutes.
