Christmas Raspberry Stack

This recipe for Raspberries in Merlot forms part of a wonderful combination of raspberries, meringue and ice cream or serve each dessert individually as wished. See separate recipes for Chocolate Meringues and Cherry Coconut Ice Cream to complete the trio.

Ingredients

  • ½ cup sugar
  • 2 cups good quality Merlot
  • 1 vanilla bean (optional)
  • 1 kg fresh raspberries

Method

  1. Put the sugar, merlot and vanilla bean if using into a saucepan and simmer until reduced by half.
  2. Pour the hot liquid over the washed raspberries and allow to macerate for 1 hour or up to 4 hours before serving.
  3. To assemble the stack see the separate recipes for Chocolate Meringues and Cherry Coconut Ice Cream. Serve 3 meringue discs layered with Cherry Coconut Ice Cream, Raspberries in Merlot and a little whipped cream topped with an almond meringue disc.
