Red Cabbage And Walnut Coleslaw

Red cabbage adds both colour and flavour variations to the more traditional green cabbage. I like it best when citrus flavours for sweetness and nuts for texture are incorporated. The walnuts will be nicer in this dish if they have been toasted.

Ingredients

  • ¼ red cabbage, finely shredded
  • ½ red onion, peeled and finely sliced
  • 1 green pepper, finely sliced
  • 2 stalks celery, finely sliced
  • ½ cup walnut pieces, toasted

Dressing

  • ¼ cup chopped fresh parsley
  • ¼ cup orange juice
  • ¾ cup mayonnaise
  • grated rind one orange

Method

  1. In a large bowl toss together the cabbage, onion, pepper, celery and walnuts.
  2. Mix together all the ingredients for the dressing and toss through the cabbage mix. Season well with salt and pepper. Cover and stand for 10 minutes before serving.

Cooks Tips

If you do not have fresh parsley use dried parsley. Place the dried parsley in a sieve and run it under cold water and stand for 5 minutes before using. This will reconstitute the parsley and while its flavour is not as good fresh it is perfectly acceptable in coleslaw.
